2020年末にTokyo Aleworksさんで一緒に作らせてもらったコラボビールをリピートコラボとして今回はInkhornで仕込みました。モルトはピルスナーモルトのメーカーを除いて全て一緒の割合の配合。ホップは少し贅沢にSimcoeでビタリング。その後のホットサイドに使ったホップの品種、産地、割合も全て一緒。ドライホップの品種もほとんど一緒ですが、大部分をCryoホップに入れ替えました。初代Cross Hatchとの共通部分はあるものの、造られるブルワリー、Cryoと普通のペレットでここまで違いが出る物かと当事者ながら驚いてます。
今回のCross Hatch (Cryo)はトップノートに草感が強く出ていて、柑橘香とメロンの様な甘い瓜感を経由した後にほんのりトロピカルなニュアンスを楽しめます。Idaho 7 cryo由来の草感は最後まで残りますが、温度が上がると柑橘、トロピカルがフワッと最初の一口よりも強く上がってきます。
名前の由来はCross WritingやCrossed Letterとも呼ばれている、便箋や郵便代の費用を抑えるために19世紀初期のイギリスで用いられていた手紙の書き方。コラボビールが準定番みたいにお互いのブルワリーで交じり合いながら作っていくビールに成長していけたら良いなって思いを勝手に込めてつけた名前です。

This is the 3rd collaboration beer with Tokyo Aleworks, and it is a repeat collab batch of the “Cross Hatch” that was brewed at Tokyo Aleworks in Itabashi towards fhe end of the year in 2020.
Most of the malt used this batch was the same as the previous batch, but the malting company of the pilsner malt was different.
Hops used in the hot side were the same except for the bittering (Simcoe instead of Magnum).
The biggest difference is that most of the dry hops were done with Cryo hops. Idaho 7 cryo gave out more herbal/dank aroma compared to the regular pellets. You get the dank/herbal whiff as your initial impression, but the grapefruit like citrus notes with melon follows before reaching the sweet tropical fruit notes.
The name comes from the letter writing practice that was commonly done in the early 19th century, which is also known as Cross Writing or Crossed Letter writing. I’m selfishly hoping that we can continue to brew this beer (or similar recipes!) as semi-regular collab beer.
