シュノーケルは、平茸とアルダー材で燻製した海塩で醸造されたファームハウスエールです。平茸はテキサス州ブダのスモールホールド・マッシュルーム農場で栽培されました。伝統的なドイツのゴーゼから部分的にインスピレーションを受けていて、ゴーゼと同様にアルコール度数は4.3％と控えめで、麦芽と塩を使い、そして酸味のある味わいです。この酸味は、酸味を抑えるために大量のホップを加えることなく、当社の混合培養で発酵させたことに由来する。とはいえ、ゴーゼはあくまでも出発点に過ぎない。そこから私たちは、オイスターマッシュルームを使用することによって、うま味の香ばしい特徴を探求することに着手しました。

Farmhouse Ale with Oyster Mushrooms and Smoked Sea Salt
Snörkel is a farmhouse ale brewed with oyster mushrooms and alderwood smoked sea salt. The mushrooms were grown at Smallhold mushroom farm in Buda, Texas. Snörkel takes partial inspiration from traditional German Gose. Like Gose, it’s moderate in alcohol (~4.3% ABV), brewed with malted wheat and salt, and has some tartness in the flavor profile. The tartness comes from fermentation with our mixed culture without the addition of a hefty dose of hops to keep the acidity in check. However, Gose only served as a jumping-off point. From there, we set out to explore the savory characteristics of umami through use of the oyster mushrooms.
