Unbalanced Breakfast is ready to return. If you have ever ordered a glass of Blueberry Pancakes at any of our taprooms, you know that we love to mix blueberry with maple syrup and coffee. While Blueberry Pancakes shares the same flavors as Unbalanced Breakfast, the former is decidedly more of a stout than a sour. For those of you that want to keep things lighter, this is the beer for you.
This sour beer starts with a mash of Pilsner malt, wheat, and Carahell for a touch of color and malt sweetness. We boil this mash and add lactose to create a richer mouthfeel and to add just a bit more sweetness. The magic really starts to happen during fermentation with our house sour yeast strain. We ferment blueberry puree to set the fruit flavor and dial in the color. After fermentation stops, we recirculate the beer over coffee beans from @coavacoffee and add maple syrup to this classic GN beer.
