Today we release The Reincarnation a European first collaboration with New Zealand beer heroes @GarageProject - kia ora Garage Project!
As well as being leading purveyors of IPAs over in their homeland, they’ve also led on development of an innovative new product, Phantasm, which has been utilised to great effect by brewers across NZ and the US and now, thanks to Jos and the Garage team, we’ve had the opportunity to brew with it here in the UK on Smug 6: The Reincarnation.
Phantasm is an extraction made from Marlborough Sauvignon Blanc grapes. They are incredibly rich in Thiol precursors, which when added correctly to a fermenting beer can unlock into strong tropical fruit aromas. Coupled with a whirlpool hop bill and a soon-to-be-released experimental yeast blend from White Labs Copenhagen, both selected with high levels of thiol production potential in mind, the results are an exceptionally high level of tropical fruit flavour compounds developed during early fermentation.
Not happy to stop there, we dry hopped in three stages through mid and late fermentation with a combination of NZ’s finest Nelson Sauvin and Motueka and the tropical king from the US, Citra.
The result is a thick and smooth 8.0% NE DIPA with prominent passion fruit, pineapple and white grape character and a medley of citrus pith notes riding underneath.
Now doesn’t that just sound awesome?
