自社農場で収穫された農作物を使ったビールを作ることで有名なノースカロライナ州のFonta Flora Breweryとの共作。
このビールの醸造が始まったのは2020年の1月。
スペルトモルト、ライ麦、小麦、オーツ麦芽を使いマッシングした麦汁に地元で採取した松の木を浸し、ブリュワリーの屋根裏に設置されたクールシップで冷却。
それを一晩放置した後にオーク樽に詰めて発酵・熟成。
1年後に状態を確かめた上で適切にブレンドし、仕上げにクランベリーとチェリーを加えてコンディショニングしました。
原材料：麦芽、小麦、スペルト小麦、ライ麦、ホップ、ラズベリー、チェリー
Run To You Cranberry & Cherry is Farmhouse Ale created with the buds at @fontaflorabrew brewed into our rooftop Koelship one day in January of 2020. This pre-pandemic beer was mashed with spelt, rye, wheat, and malted oats, lightly hopped, then pumped into our Koelship onto freshly split Virginia pine logs! After overnight cooling and inoculation via the cool night air we racked the beer into oak barrels for fermentation and aging at our wild facility. A year or so later we hand-selected and blended the barrels onto loads of cranberries and cherries. The final product is a beautiful beer for the holiday season.
