WCB × Hollingbery & Son Hops Collaboration!

“WCBロゴシリーズ”第9弾。
コラボレーション番外編として、ラベルArtもマイナーチェンジ✌🏼

今回、アメリカのホップサプライヤー『Hollingbery & Son Hops』から、収穫＋ペレット化したばかりのホップ「McKenzie」を空輸で取り寄せ！日本での取扱いはまだ珍しい品種のため、まずはそのホップのフレッシュなポテンシャルを存分に味わえるビールとして、スタイルはPilsnerに決定！

さらにノーブルホップのハーバルな特徴をビールにプラスするため、「Hallertau Mittelfruh」の育成種であるNZ産の「Pacifica」もセレクト。

レシピは、ジャーマンピルスナーに近い硬水を参考に水質調整。さらに貯酒期間は従来のWCBラガーより長い約4週間をかけてラガーリング。ホップのフレーバーが際立ち、クリーンでシャープな味わいを実現。

鮮烈なレモンを思わせる香りが広がり、続いてシリアルやビスケットの柔らかい穀物由来のニュアンス。ハーブや緑茶のような清涼感と、ほんのり漂う柑橘感。鮮やかで香り高く、軽やかなボディにキリッとした苦みが効いたドリンカブルな一杯に。

I wanted to call this one "The Skeleton Key" and give it a bad ass can Hop Dude RPG-esque illy fit--because honestly hooking up with the good folks at Hollingbery has unlocked way more doors than I could have ever anticipated--but in the end we decided to go with... subdued and smart. Because it's a pils (Hop Dudes like to keep shit simple). Our first crack at McKenzie hops features air-freighted 2025 pellets courtesy of our year-round sandaled Yakima comrades, and you can legit taste the freshness. Light on body to make the hops pop is our MO around here, and this one doesn't disappoint. Sensory is pretty freaking rad for a hot side only pils, we're getting slap you in the face fresh lemon in the nose, with a touch of grain-driven biscuity / cereal-y nuance. Flavors notably repped are grapefruit citrus, pineapple, lychee and some spicy goodies (white pepper?) and a bit of honey to round it out. We're going to be smashing this one for a while and wondering why it took us so long to find the freaking fountain of fresh hops (and feeling glad we did).
