ノーブルキングは、ジェスターキング初期のビールの一つであり、醸造理念を最もよく表しているビールの一つである。「ノーブル・キング」の由来は、「アルファ・キング」と対をなす、高アルファ酸、ホップ主体のビールとして着想されました。低アルファ酸でノーブルホップ主体のビールなので、「ノーブル・キング」という名前がふさわしいと思いました。トリニティ帯水層の井戸水、TexMalt社のテキサス産麦芽と小麦、パールとファグルのホップを使っています。ジェスターキング独自の酵母を使用し、ステンレスタンクで発酵した後、再度パールとファグルのホップでドライホッピングしています。

Noble King is one of Jester King's earliest beers, and one of the best representations of our brewing philosophy. “Noble King” was inspired as a counterpart to “Alpha King”: high-alpha acid, hop-driven beers. Since it’s a low-alpha acid, Noble (or Noble-esque) hop-driven beer, the name “Noble King” felt right. Brewed with well water from the Trinity Aquifer, Texas malted barley and wheat from TexMalt, and Perle and Fuggle hops. Fermented in stainless steel with Jester King mixed culture. Dry hopped with more Perle and Fuggle. Naturally conditioned through refermentation in the bottle/keg.
