オーク樽で発酵させたCellerdor流ウィットビア。Bootleg Biology社製のSaison Parfait種の酵母を投入し、オーク樽で３～４か月発酵させた。伝統的なウィットビア同様オレンジの皮とコリアンダーも使用され、最後オレンジブロッサムハニーを入れ6週間のコンディショニングを経てリリース。仄かにシトラシーで爽快な風味、少々のアーシーでフローラルなキャラクターにファンキーなニュアンスが感じられる。軽やかな飲み口と共にフルーティーな味わいと少々の酸味が口内に広がる。
Rustic Wheat Ale w/ Orange Zest & Coriander
We’re super stoked to introduce you all to this new offering. Our “Witbier” is fermented in oak barrels with the Bootleg Biology Saison Parfait Strain (same as we use for Saison du Rosier) and aged for 3-4 months. It’s can-conditioned with local orange blossom honey and aged for an addition 6 weeks. No mixed culture was pitched, but it definitely has some brettanomyces funk and a small amount of acid. This beer is imminently drinkable, with a subtle citrusy flavor from the fresh orange zest that plays remarkable well with the fruitiness from the yeast. The aroma has a prominent coriander flavor coming off as slightly earthy and floral. This is not your average wheat ale. Cheers!
