毎年恒例、海外で大人気のLUCKY 7を今年も仕込みました。

日本酒用の7号酵母を使用しているものの、あえて麹や酒米は使用せず、クラシックなセゾンを日本酒酵母で醸す、をコンセプトにしています。
ベースにはスペルトとライを使用し、WPに少量のハラタウブランで香り付け。
ライ麦由来の滑らかでスパイシーなキャラクターに、ホップの華やかさ、そして酵母の適度な吟醸香といままで味わったことのない独特なキャラクター。
非常にドライでアルコール度数も低く、グビグビ飲めるのに様々な味わいを楽しめるビールです。
発酵が長く繊細で、非常に気を使う酵母ではありますが、それだけの価値のある唯一無二な味わいです。
普段世に出ている日本酒酵母を使ったビールでも、酵母のキャラクターのみをバチっとはめたビールってほぼないと思うので、ぜひ試してみて欲しいなと思います。

We’ve brewed LUCKY 7 again this year—our annual release that’s hugely popular overseas.

While we use sake yeast No.7, we intentionally avoid using koji or sake rice. Instead, the concept is to brew a classic saison using sake yeast.

The base is made with spelt and rye, with a touch of Hallertau Blanc added in the whirlpool for aroma.

The smooth, spicy character derived from the rye is complemented by the floral brightness of the hops and the yeast’s delicate ginjo-like aroma, creating a uniquely complex profile unlike anything we’ve made before.

It’s extremely dry with a low ABV, making it highly drinkable, yet layered with a variety of flavors.

The fermentation is long and delicate, requiring careful handling, but the result is a truly one-of-a-kind beer that makes it all worthwhile.

Even among beers brewed with sake yeast, it’s rare to find one where the yeast character is expressed so cleanly and distinctly—so we hope you’ll give it a try.
