久しぶりにCold IPAを仕込みました。
今回新しい試みとして、いつもは米を煮て糊化させているところを、麹を使用することによって糖分を抽出してみました。
何が違うのかって、その方が楽だし効率いいよね、っていうだけの話です。
とはいえ味への影響は多少なりともあるので、どちらがいいのかもうちょい試してみようかなと思ってます。
使用したホップはColumbus, Ahtanum, Cenntenial, Idaho7, Riwaka, Comet, Elani, Citra.
柑橘感をメインに押し出しつつも、適度なトロピカル感と青さが酒米の優しい甘みとマッチします。
キリッとしたホップ感ながら米の味わいでバランスが取れたビールです。

I brewed a Cold IPA for the first time in a while.
As a new experiment, instead of cooking the rice to gelatinize it as I usually do, I used koji to extract the sugars.

What’s different? Honestly, it’s just easier and more efficient—that’s the main point.
That said, it does have some impact on the flavor, so I’d like to try both methods a bit more and see which I prefer.

The hops used were Columbus, Ahtanum, Centennial, Idaho 7, Riwaka, Comet, Elani, and Citra.
Bright citrus notes take the lead, supported by a moderate tropical character and a touch of green, herbal freshness, all of which pair nicely with the gentle sweetness of the sake rice.

It’s a beer with a crisp, sharp hop presence, balanced out by the subtle flavor of the rice.
