Free Verseもいいけれど、VBCのフラッグシップIPAに新しい風を吹き込んでみるのも面白いのではないでしょうか？ ある日、通常のFree Verseの麦汁を別の発酵容器に移し、ベルギーのランビックメーカーから分離したブレタノマイセスの菌株のみで発酵させました。従来のFree Verseの発酵に使われていたエール酵母とは対照的に、このブレット発酵では、パイナップルや熟したマンゴーのような独特の風味とトロピカルなファンクを感じることができました。ホップの香りを最大限に引き出すために、いつものFree Verseのドライホッピング処理を行いました。瓶詰めして二次発酵することで、ブレット・フリーヴァースは、ソフトで自然な炭酸と深いニュアンスのあるフレーバーを提供します。
Free Verse is great, but wouldn't it be interesting to try out a new spin on VBC's flagship India Pale Ale? One day they diverted regular Free Verse wort to a different fermentation vessel, where it was fermented solely with a strain of Brettanomyces isolated from a respected Belgian Lambic producer. As opposed to the ale yeast used to ferment traditional Free Verse, this Brett fermentation showcases distinct pineapple and overripe mango flavors with a touch of tropical funk. The beer received the standard Free Verse dry-hopping treatment in order to maximize hop aroma. Bottle conditioning provides “Brett” Free Verse with a soft, natural carbonation and deeply nuanced flavors.
