We love Japan, so when we were asked to brew a virtual collaboration with CraftRock, a chain of brewpubs - of course we said YES!It turns out that we both share a love of music, beer and experimentation, so we leveraged all three and created a truly experimental beer - A Philly Sour Black IPA with coffee from our friends at hasbean.‘Philly Sour’ is a new yeast strain cultivated from a tree in a cemetery in Philadelphia, PA. What makes it special is that as well as producing ethanol (alcohol) it also produces lactic acid, to provide a gentle tartness.This is a complex beer, with dark roasty flavours from the grain and coffee, bright fruity flavours provided by the hops and a pleasant tartness bringing you back for another sip.
