To ol Cityより程近いSvinningeBakeryとの合作である今作は、ビッグでボールドなSour Mash Triple IPA。
80kgものサワードウパン(乳酸菌と酵母を主体とし、複数の微生物を培養させる伝統的な製法で作られるパン)を使用。
ホップはTalus、Simcoe、Idaho7を選定し、ライ麦の繊細な香りと美しい調和を果たしています。
Using no less than 80kg of sourdough bread courtesy of our local Svinninge Bakery, we got to work making this sour mash Kvas TIPA. The result is a big and bold sour ale, with notes of rye coming through beautifully, and playing well with the aromatics of the Talus, Simcoe and Idaho 7 used also.
Design Notes: A photo of a shattered window at an office building. The silicone paste (probably added to prevent further collapse of the glass) is what makes this a true masterpiece.
