カナダ、オンタリオ州のBellwoods Breweryとのコラボレーションで造られたヘレス。モルトビルにはヴィエナモルト、ピルスナーモルトを使用し、ホップにはSpalter Selectを用い、お気に入りのヘレス生産者が使用している酵母を培養し発酵。デコクションマッシングや発酵途中のビールを加えラガーリングするクラウゼニングなど伝統的製法を用いて醸造された。パンを想わせるフレッシュな風味にナッティーさ、仄かなフローラルさが感じられる。苦みは控えめでクリーンかつスムースな味わい。

A Helles is a pale lager made with our buds over at Bellwoods Brewery in Toronto. We wanted to make a traditional German helles with authentic ingredients as well as some German brewing techniques that we've never tried out before.

It turned into a really great beer that drinks super clean and smooth. There are flavours and aromas of bready and nutty malt, a touch of floral hop character, and low bitterness without seeming sweet. A Helles is the perfect drinking beer and we think it turned out great!

The ingredients used in A Helles are pilsner malt and a touch of Vienna malt, spalter select hops, and a new to us lager yeast that originated from our favourite German helles producer. Some of the traditional German techniques that we used were decoction mashing (boiling the mash) and natural carbonation through krausening (lagering the beer with freshly fermenting beer).
