We steeped the branches (with leaves and flowers) of Myrica Gale in the coolship for one night. The beer was then barrel-aged for a year. Gale is a mysteriously aromatic plant, growing in wetlands, and is considered a crucial part of the medieval gruit-mixture. Bottled February 2022.
