GROUNDTAP BREWERY さん（ @groundtap_brewery ）とのコラボレーション。両ブルワーがアイルランドに滞在していたことをきっかけに、アイルランドをテーマにしたコラボ第3弾です。 16世紀、アイルランドの首都ダブリンにあるダブリン城で醸造されていたとされるビールを現代に再現しました。原材料の半分以上がオーツ麦という、今ではほとんど見かけないレシピです。かつてオーク樽で発酵させていた香りを再現するため、発酵段階でオークチップを漬け込みました。

フローラルな香りに穏やかなオーク香が混ざり、複雑で芳醇な香りが広がります。口に含むと、バランスの良いミディアムボディにオーツ由来のまろやかな口当たりと、はちみつを思わせる柔らかな甘み、後味にはじんわりとスパイシーな香味も感じます。味わい深くも重さや引っ掛かりはなく、ダラダラと飲み続けられるダブリンキャッスルエールです。その歴史や背景にも想いを馳せながらお楽しみください！

A collaboration beer with GROUNDTAP BREWERY. This beer is a modern recreation of a style said to have been brewed in the 16th century at Dublin Castle. More than half of the grist is oats, a recipe rarely seen today. To evoke the character of fermentation once carried out in oak barrels, oak chips were added during fermentation.

Tasting notes from GROUNDTAP BREWERY: Floral aromatics intertwine with gentle oak, creating a complex and expressive nose. On the palate, a well-balanced medium body carries a smooth, oat-driven mouthfeel, with soft honey-like sweetness and a subtle, lingering spiciness on the finish. Deeply flavorful yet light and effortless to drink, this is a Dublin Castle Ale you can happily sip pint after pint. Enjoy it while reflecting on the history and story behind the glass.
