The Bruxellensis is refermented for several months with a wild yeast of the Brettanomyces type from Brussels. Amber with copper reflections, its fruity attack (pineapple, red fruits) is supported by aromas of hops, added cold, and complex notes of old leather, almost animal. A gourmet malty touch then develops, with biscuit nuances and a persistent fruity aroma, tending towards candied. Its finish is dry and bitter, its character is unique.
