日本・静岡県静岡市用宗のWest Coast BrewingとOne Dropの「友情」によりこの『Yujo Cold IPA』は生まれた。One DropのClay とNickがニュージーランド・ネルソンの世界でも有数のホップ農場に選定のために訪れた際、WCBのクルーと合流。意気投合した両ブリュワリーはそこで最高にフレッシュなペレットホップを選んで、生産ラインから直接送ってもらい、コラボブリューイングに使用することを決定した。Nickはこのビールを造るにあたって、素晴らしいホップのショーケースとなるようなビールにするために、穀物の一部を米に置き換え、ボディに軽さを演出。結果、NZ産Cascade、Nelson Sauvin、Riwakaによるドライホッピングの効果がより一層引き出された。さらにクリーン・フュージョン（One Dropが開発したビール製造工程の新技術。ドライホッピングの効果をさらに引き出し、ビールをクリーンな状態にするため、多段階で遠心分離機を用いる）を施し、ラガー酵母で発酵させたことで、クリーンでクリスプなCold IPAスタイルに。ホップが繋ぐ本物の友情と最高のコラボレーションに、カンパイ！

Our latest collaboration beer, Yūjō (Friendship), was brewed in partnership with West Coast Brewing from Shizuoka, Japan. During our visit to Nelson, New Zealand for hop selection, we had the pleasure of meeting the WCB team and together we visited some of the best hop farms in the world. Impressed by the quality of the hops, we decided to get fresh pellets straight off the line and had them shipped directly to our brewery to brew with.
To showcase the exceptional hops, we decided to use a blend of grains and rice in our recipe to give a clean and unobstructed base for choice kiwi cones to pop off of. We chose New Zealand Cascade, Nelson Sauvin, and Riwaka hops and put them through our Clean Fusion Dry Hopping process. The WCB were super interested in this process and are going to try something similar on their version of the beer they'll be brewing in Shizuoka. Finally, we fermented the beer using a clean and crisp lager strain, which allowed the hops to shine through and added the slightest kiss of Australian Yuzu juice. Expect a crispy and bitter little number packed with new world hop character.
Yūjō Cold IPA represents the spirit of collaboration and the love for great beer that we share with our friends from WCB. We are excited to share this unique and delicious collaboration with ya'll.
