クールシップで自然発酵を施したワイルドエール。ベースビールはエイジングされたものとフレッシュなホップを使用し、モルトビルにはピルスナーモルトと生のスペルト麦を使用。クールシップで発酵後、ステンレスタンクで9カ月熟成の後、フレンチオーク樽で27カ月寝かせた。レモンを想わせるシトラシーで爽快なフレーバーにファンキーさが感じられる。すっきりとした程よい爽やかな酸味が口内にひろがり、最後ドライに締めくくられる。
Spontaneous is a coolship beer that was spontaneously fermented. The base beer was made with aged and fresh hops, pilsner malt from Barn Owl Malt in Belleville, and raw spelt from K2 milling in Tottenham. After brewing, we let it cool naturally in our coolship and inoculate itself with the microbes in the air at our farm. The next morning we transferred it out of the coolship to start its long and slow spontaneous fermentation.
This is our third blend of Spontaneous and this batch has been aging since March 2020. It spent the first nine months in stainless steel tanks and then the next 27 in 500L French oak barrels. When it was three years old, we bottled it and it's now ready to drink. This is one of our most complex blends and we can't wait for you to try it!
