ソーヴィニョンブランの木樽で自然発酵させたワイルドエールに、地元産のアプリコットを浸漬させ、さらに8か月熟成。ファンキーでウッディなニュアンスの上に、アプリコット由来の瑞々しい果汁感と複雑なアロマが重なり、マイルドな酸で余韻を締めくくる。
ur new Boss craft beer is a wild ale in which the must, specially created using wheat and aged hops, is placed in barriques and tonneaux with the addition of a pied de cuve created with destemmed and lightly pressed Sauvignon Blanc grapes. The yeasts and bacteria naturally present on the grape skin start the fermentation. After approximately 4 months, 400 g/l of local macerated apricots are added.
It has an orange color with white foam. On the nose it is complex, with apricot notes clearly evident, which fit harmoniously into a wild context with hints of cellar, mould, mown grass and salami skin. The drink shows a good body that supports the structural complexity where acidity is queen and offers a lean and satisfying drink.
