地元のクラフトビールバーの10周年を記念し、初のトリプルIPA：TENを醸造しました。10周年のテーマは、アルコール度数10%、苦味、ダンクな香り、ドライな口当たりのビール。

苦味とダンクな香り。IBU140！数値としては高めであり、確かにTENには苦味はありますが、強烈な苦味というのではなく、むしろアルコールとのバランスが驚くほど取れています。ダンクな香りを出すため、オレンジ系の柑橘やパイニーな風味を持つセンテニアルやコロンバスといったクラシックなホップを多く使用しました。醸造工程を7段階に分けてホップを加えることで、最初のほのかな香りから最後の一口まで持続する、非常に濃厚なホップの風味を実現しました。

ドライ。理論上は非常にドライなビールですが、苦味と同様に実際は少し異なります。発酵性の高い麦汁をつくり、酵母が糖分の大半をアルコール生成に消費できるよう、長時間低温のマッシングを行いました。しかしながら、高アルコール度ビールには、自然な甘みとコクが伴います。

結果、苦味とドライさが際立つビールでありながらも、高いアルコール度数がバランスをもたらしてくれ、とても飲みやすい仕上がりとなりました。

製造量の大半は10周年記念イベントで使用したため、販売用ケグはごく少量のみです。お早めにお求め下さい！

In honor of the 10th anniversary of one of our local craft beer bars we brewed our first triple IPA. The request for TEN was that it should be 10% ABV, bitter, dank and dry. I think we succeeded.

Bitter and dank. 140 IBU! That's a big number but in reality TEN is bitter but not blindingly so. In fact, it is surprisingly well balanced against the alcohol. To get the dankness we leaned heavily on classic hops such as Centennial and Columbus for their orangey citrus and pine sap flavors. By adding hops at 7 different stages in the brewing process we were able to get a very saturated hop flavor that stays with you from the first hint of the aroma to the last sip.

Dry. This is a very dry beer in theory, but like the bitterness, reality is a little different. We performed an extra long, low temperature mash in order to create a wort that was very fermentable and allowed the yeast to use up the vast majority of the sugar while making alcohol. However, when you have high alcohol there is a natural sweetness and body to the beer.

The result is a beer that is very bitter and dry but has enough alcohol to balance that out and become dangerously drinkable.

Because the majority of the batch was used for the 10th anniversary celebrations we only have a small number of kegs available for sale. Get one while you can!
