Saint Yoshieの最新作です！今回はセゾンレシピをベースにホップを調整し、柚子の皮を加えたドライホップ柚子セゾンです。

今年の柚子は大豊作だったので、柚子を使ったビールを造ろうと思いました。前にも柚子セゾンを醸造しましたが、今回は少し趣向を変えて、柚子の風味を強く前面に出すのではなく、興味深いドライホップと柚子の香りを調和させました。パシフィカホップはオレンジマーマレードや柑橘系の香りに加え、豊かなフローラル香とほのかなスパイシーさが特徴です。理想的な組み合わせになるだろうと思いました。

仕上がりは、期待通りのドライで爽やかなセゾンでありながら、スパイシーさとフローラル感が広がっていきます。特に飲み終える頃に柚子の香りが立ち上るビールです。セゾン酵母、あるいはホップ由来なのかは区別するのは難しいですが、それらが見事に調和しています。様々な素材が融合して生まれた興味深いビールに、私たちは大変満足しています。

Saint Yoshie is back! This time we took our saison recipe and tweaked the hops and added yuzu zest.

Our yuzu trees gave us a bountiful harvest this year and so we wanted to use them in a beer. In the past we have made a saison with yuzu so this time we wanted to change things a little. We decided that rather than making a beer with really strong yuzu flavors we would try to blend the yuzu aroma with an interesting dry hop. Pacifica has a blend of orange marmalade and citrus notes along with a lot of floral aromas and a little spiciness. It seemed like a perfect match.

The result is a dry, crisp saison like you would expect, but with an amplified amount of spice and floral and then a yuzu aroma that comes through, particularly toward the end of the sip. It is really hard to pick apart the contributions from the saison yeast and the hops because they blend so well together. We are really happy with the beer, it is a blend of different ingredients that come together to make an interesting beer.
