カナダ、ケベック州のレジェンドブルワリーUnibroueとのコラボレーションで造られたハイブリッドなベルジャントリペル。ホップにはSaaz、副原料にコリアンダーと共に橙や黒蜜を使用。更にGodspeedの自家培養のラガーイーストも投入されている。ビールの設計は伝統に基づきながらも日本的な副原料を採用しているのがGodspeedらしい。モルトのふくよかな旨味、少々の柑橘を想わせる爽快な風味、そして仄かにスパイシーさが感じられる。滑らかなマウスフィールと共に芳醇な味わいが口内に広がり、最後は少々の甘味の余韻で心地よく締めくくられる。

‘Hommage, a la Fin du Monde’ is a Hybrid Belgian tripel (9.0% abv) that stands true to its archetype. Our contribution to this style is the addition of Japanese Dai Dai citrus (だいだい), Japanese dark sugar ( 黒みつ), a touch of coriander, and co-pitched with our house lager yeast. The black honey lends a hand to the burnt golden hue and a rich complexity on the palate. The interplay of Dai Dai citrus and the expressive Belgian yeast form a melange of spice and fruit, finished with the finest Saaz hops. Naturally carbonated, it finishes dry, with a lasting effervescence.
