Pineapple and peach fuzz notes are bursting from HELIOGRAM, our new oak-fermented tart wild ale! With a grist of 70% pils and 30% wheat and a light kettle addition of aged hops, this begins with a bit of lambic influence; but we fermented it with our hazy IPA strain in our pediococcus-harboring wild oak foeder, with a secondary addition of brettanomyces, before transferring to stainless steel and dry hopping with Nelson Sauvin and El Dorado. Functionally what we have here is a wild, slightly tart hazy pale ale, in which gentle acidity and brettanomyces is working to unlock the tropical glycosides and thiols that these incredible hops contain as latent potential.
