WCBが絶大な信頼を置く、ニュージーランドのホップファーム『Freestyle Hops』が実験している、新しいホップの研究プロジェクト。

これまでに、彼らや周りの仲間と築いてきた信頼関係から、WCBは、日本のブルワリーで唯一、この取り組みへ参加する機会を得ることに。

正式名称すら、まだ与えられていない、品番で管理されている実験段階のホップ“NZ04”を、現地より特別に空輸で調達し、即ビールの仕込みへ！

このホップを、どんなビールで使うかは自由。レシピ設計から、アロマやキャラクターの表現まで、WCBなりの可能性を探りながら、完成したビールのフィードバックは、再びファームへ戻すお約束。

今回、ホップのポテンシャルや仕上がりの観察のしやすさを狙い、シンプルなPilsnerスタイルをセレクト。レモンやライム、グレープフルーツを思わせる、明るく表現力豊かな柑橘アロマ。シャキッとした赤りんごやライチのニュアンス。さらに、シリアルやミント、ゼラニウムのようなハーブや草の印象も。洗練された香りと、その複雑さが絶妙なバランスを兼ね備える一杯。

The Hop Dude is always enamored with the new stuff, and has so much respect for the amount of effort required to R&D new varieties, not to mention that it takes SO MUCH TIME. You get one season each year, and while there might be? ways to accelerate certain aspects of the process, when you are working to grow a new hop with a consistent harvest window that is exciting and can make it through annual climate nuance, senescence timing, the list goes on...It's the ultimate passion project. We are super thankful to Freestyle for allowing us a chance to play with one of their new hops, NZ04. The question is, how does it translate from whole cone to pellet to finished beer? We gave it a shot as a single DH in a NZ pils we make from time to time to see what would come through (and have a baseline for comparison) - the aromatics are pretty fascinating. Layered citrus zest, crisp red apple (?!) and lychee, and for whatever reason flavor descriptors like herbaceous, freshly baked white bread, cedar and geranium are on the paper. Honestly a well-balanced beer, with a kind of refined and complex aromatic profile that we find fascinating yet hard to place among peers. We are going to do one more beer with this hop, and honestly can't wait to see the results (and are stoked for you to try it and give us your feedback as well).
