Unsui (meaning: 'clouds and water') is a study in how British and Czech brewing traditions contain a lot of cross pollination. For this beer we used Haná malt, a Czech heritage varietal that was floor malted in the UK, as well as Most hops, a sister of a few English varieties that ended up growing in Czechia. This cultural and agricultural exchange plays out in Unsui's propulsive aroma and flavour. Buffeted by the judicious use of Harlequin, Olicana, and whole leaf East Kent Goldings hops, the end result is all honeydew melon, canned peaches, and spearmint. Its round, malty backbone and opulent texture parry a dry, inviting finish.
