Back in 2016 I invented a radical process of pyro-concentrating fresh apple juice before fermenting. The boiling process created strong aromas of fruit leather, prunes, bitter chocolate, soy sauce, and dark fruit. The boiling also increased the ABV significantly.
This last release is the culmination of my twelve years of cidermaking and is a celebration of my unusual cidermaking style. Sweet but not too sweet, with a hint of dark chocolate bitterness and brightness from orange zest, this cider is a perfect note to go out on. Cheers!
