他のビールに漬け込んだネクタリンとピーチを二次利用し、さらにカモミールも使用したワイルドエール。Masumoto Family Farmにて収穫されたLe Grandネクタリンをその他のビールで使用したのち、ベースビールと共にワイン樽で4か月漬込み一次発酵を施した。同農家で収穫されたGold Dustピーチとモミールを半年間木樽で漬け込み熟成。そして充填時にはちみつを投入しコンディショニングを施した。ネクタリンやピーチのジューシーなキャラクターが控えめながらも程よい存在感があり、カモミールのハーバルなキャラクターとファンキーさが花を添える。スムースなマウスフィールと共にバランス感に優れたフルーティな酸味と少々の複雑さが口内にひろがり、最後すっきりドライに締めくくられる。

Some of my favorite beers are “second-use” beers; those that get racked on to fruit after a beer has already been aged on that fruit. The character is subtle but still fruity and the balance is totally different. Talisman is a batch of some of my favorite second-use barrels from last stone fruit season. Two barrels of beer aged on Le Grand nectarines and two barrels of beer aged on Gold Dust peaches, both from Masumoto Family Farm. Both batches underwent extended aging and we infused just a bit of Chamomile just before being dosed with honey and canned/kegged.
