３種類の酵母をブレンドしたジューシーなIPA。

これまでに造ったIPAのレシピを掘り起こしリミックスする奈良醸造5周年企画、最後のビールです。

ベースとなったのは、2021年Far Yeast Brewingとのコラボにより実現したアメリカンIPA「CROSS ROAD」。このとき使用した酵母は、奈良醸造がイギリス由来の酵母、Far Yeast Brewingがベルギー由来の酵母。そして今回、もう１種類の酵母をブレンドし、香りにもう一枚のレイヤーを重ねることに挑戦しました。

新たに取り入れたのはドイツ由来のヴァイツェンと呼ばれる小麦ビールに使われる酵母です。オリジナルのヴァイツェンは、小麦麦芽を使用することでバナナやクローブのような特有の香りが生み出されますが、今回は大麦麦芽のみを使用。ヴァイツェン特有の香りを控えめに抑えることで、他の酵母の醸し出す香りとバランスさせました。

メインのホップとして使用したCitraとTalusが、ブレンドした酵母由来のエステルとあいまって果物のジューシーな香りを想起させます。一方で、IPAには古典的に使われるホップと言っていいColumbus由来のDunkな香りが見え隠れしています。一口飲めば、骨太の麦芽と強い苦味、そしてしっかりとしたホップの味わいが同時に感じられる、満足度の高い一杯となりました。

The base idea for this beer is from 'Crossroad,' an American IPA that through our collaboration with Far Yeast Brewing in 2021. At that time, we used two different yeasts – Nara Brewing brought an English yeast, while Far Yeast brought a Belgian yeast. Now, for this release, we've blended in yet another yeast, adding another layer of aroma complexity.

The new addition is yeast commonly used in German-style wheat beers, known as Weizen. The original Weizen produces distinct aromas like banana and cloves, to use of wheat malt. However, for this beer, we used only barley malt, toning down the Weizen's characteristic aromas to harmonize with those produced by the other yeasts.

The primary hops used, Citra and Talus, combined with esters from the blended yeast, evoke juicy fruit aromas. Meanwhile, the classic IPA hop, Columbus, contributes hints of dunk aromas. With every sip, you'll experience a robust malt backbone, a pronounced bitterness, and a well-defined hop character, making it an immensely satisfying brew.
