マチュレーション・シリーズでは、1種類の樽で熟成させたビールを選び、異なる樽がビールの最終的なキャラクターにどのような影響を与えるかを紹介しています。栗の木で作られた非常に古い大きなオロロソ・シェリー・ボコイ樽でワイルド・エールを2年間熟成させ、伝統的なオークのオロロソ樽で熟成させた2年熟成のワイルド・エールを少量ブレンドした。オロロソ樽は、トーストしたクルミ、キャラメリゼしたフルーツ、スパイスの風味でビールを引き立てています。
For our Maturation series, we select beers aged in a single type of barrel to showcase how different casks affect the final character of a beer. We aged our Danish Wild Ale in a large, very old Oloroso Sherry Bocoy cask made of chestnut wood for two years, and blended this with a smaller amount of two-year-old Danish Wild Ale aged in a traditional oak Oloroso barrel. The Oloroso casks enhanced the beer with flavors of toasted walnuts, caramelized fruit and spices.
