ミードとビールのハイブリッド的なワイルドエール。エイジングされたホップを使用して造られたセゾンに8カ月もの間複数回に分けてブラジリアンペッパーツリーハニー（和名：サンショウモドキ）を一樽あたり22キロ投入。シトラスみのあるフルーティーなフレーバー、蜂蜜の滑らかな風味、ファンキーさに加えてスパイシーかつウッディーなニュアンスが感じられる。スムースなマウスフィールと共に複雑な味わいが口内に広がり、最後ドライに締めくくられるためハイアルコールにも関わらずスイスイと飲み進められてしまう。
“Wings of Wax” transcends the boundary between beer and mead with a fusion of our aged hop saison (“Snakes & Ladders”) and an astonishing quantity of Brazilian Peppertree honey. Over 8 months, each oak barrel received multiple doses of this unique honey, totaling a staggering 50 pounds! Brazilian Peppertrees are from the same family as poison oak and mangoes, and this honey imparts unexpected layers of spice and wood, complementing the saison’s inherent complexity. At 11.2% ABV, “Wings of Wax” is a deceptively smooth sipper, bursting with honey aromatics and a warming finish that defies its bone-dry character.
