大麦、小麦、オーツ麦すべてスコットランド産を使用。
1次発酵にBrett株を添加し、平均4ヶ月の熟成を経た3つのバッチのビールをブレンドし、そこに醸造所の近隣で採取した新鮮なエルダーフラワーの花を加え、生のそば粉の蜂蜜を使用して再醗酵させました。
この濃厚なそば粉の蜂蜜は、ほのかな糖蜜と土の香りをもたらし、混合培養による明るいエルダーフラワーのアロマと個性と融合しています。
Golden Sour with Buckwheat Honey & Elderflower
Primary fermented with a blend of Brettanomyces strains, and brewed with local Scottish barley, wheat and oats. Honeybucket was blended from 3 different batches of beer which had an average age of around 4 months, to which we added fresh elderflower blossom foraged from the local vicinity of the brewery.
In this year’s version (2022) of Honeybucket we refermented with raw buckwheat honey supplied by our friends at the Edinburgh Honey Co. The dark rich buckwheat honey lends subtle molasses and earthy notes which combine with bright elderflower aromatics and character from the mixed culture.
Drink young, or age. This will get weirder.
