名前について / About the Name

Sierra Nevada Brewingのペールエールのようなモルティなバックボーンにアメリカンホップが輝くペールエールを作ろうと考えました。ただホップはCascade Deep CutというレイトハーヴェストのユニークなCascadeをメインに。

このスタイル名はあえてHeritage(伝統、継承されたもの)という言葉を使いました。Old SchoolやClassicとも少し違うニュアンスです。

Groundswellとは海上の遠く離れた場所で発生した強い風や嵐によって作られたうねりが、長い距離を旅して届く波のことを指します。

I set out to brew a Pale Ale inspired by the classic balance of beers like Sierra Nevada Pale Ale, where vibrant American hop character shines over a solid malty backbone. For this beer, I chose Cascade Deep Cut as the featured hop—a unique late-harvest Cascade variety with its own distinctive character.

I intentionally used the word **“Heritage”** for the style name. It carries a slightly different meaning than “Old School” or “Classic.” Heritage speaks to something that has been passed down, preserved, and carried forward—a tradition worth continuing.

**Groundswell** is a surfing term that refers to swells generated by strong winds or storms far out at sea, traveling long distances before eventually reaching the shore. It symbolizes something powerful and enduring, carrying energy across great distances before making its presence felt.

造りかた / How It's Made

ピルスナーモルトをベースに、10%のミュンヘンモルト、2%のカラメルモルトのモルト構成です。
ブドウ糖で少しアルコール感も加えています。
煮沸工程ではCentennial、WPではSimcoe Dyna Boost、ドライホップではCascade Deep Cutのみを使いました。
Cascade Deep Cutはオレゴン州のホップファーム「CROSBY HOP」の商品で、従来のCascadeよりも華やかなフルーティなブランドです。レイトハーヴェストのホップなんだそうですが、その熟れたニュアンスがとてもユニークです。

The malt bill is built on a base of Pilsner malt, complemented by 10% Munich malt and 2% caramel malt. A small addition of dextrose was used to boost the alcohol content while maintaining a clean finish.

For hopping, Centennial was added during the boil, Simcoe Dyna Boost was used in the whirlpool, and Cascade Deep Cut was featured exclusively in the dry hop.

Cascade Deep Cut is a hop product from Crosby Hops in Oregon. Compared to traditional Cascade, it offers a more expressive and fruit-forward aromatic profile. It is made from late-harvested hops, and the ripe, mature character it develops is what makes it particularly unique and intriguing.

味わい / Tasting Notes

香りはベルガモットを思わせるエレガントな印象です。オレンジ色のオイリーな熟れた柑橘のようです。そして少しハーバル。パインや樹脂系のキャラクターはとても控えめです。
モルトの甘さが少し残ってマイルドなアフターテイストです。苦味は控えめ。

The aroma is elegant and reminiscent of bergamot. It presents notes of ripe, oily citrus with an orange-like character, accompanied by a subtle herbal quality. Pine and resinous hop characteristics are very restrained.

A touch of malt sweetness remains on the palate, leading to a smooth and mellow finish. Bitterness is kept moderate, allowing the balance between malt and hop character to shine through.
